Bacon Potato Scramble



  • 1/2 pound of Bar-S Thick Cut Bacon
  • 1 unpeeled, red potato (cut into 1/2-inch pieces)
  • 1/8 teaspoon of salt
  • 3 tablespoons of water
  • 6 eggs or 1 1/2 cups of egg product
  • 1/2 teaspoon of dried basil or 1 teaspoon chopped fresh basil leaves
  • 2 tablespoons of Parmesan cheese (shredded)
  • 1 teaspoon of Dry Roasted Red Pepper


  1. Spray skillet or pan with non-stick cooking spray; put over medium heat.
  2. Add potatoes and a pinch of salt.
  3. Add 3 tablespoons of water, cover and stir frequently.
  4. Cook 5-7 minutes on low until potatoes are softened
  5. While potatoes soften, cook the Bar-S Thick Cut Bacon according to packaging instructions (do not overcook). Bacon should be soft enough to enjoy with the potato-egg mixture.
  6. Scramble eggs with a whisk in a bowl and add basil and roasted peppers. Pour egg mixing into the pan or skillet with potatoes.
  7. Add Bar-S Bacon and scramble together until well-mixed and cooked thoroughly.
  8. Add as much Parmesan cheese as you like, and enjoy!!
